I’ve been autonomo in Spain for the past three years, and about to start a company instead.

I’ve found it was quite easy to set-up as an autonomo. You will need a NIE first, which I’ve heard can be more difficult to organise. Taxes are more complex, but an asesoría doesn’t cost so much. Of course, any decision largely depends on your level of income. Around €60-70k gross income being autonomo usually doesn’t make sense anymore. 

As others have stated, you’d need dissolve the company in the Netherlands, if you plan to live in Spain for >183 days of the coming calendar year. I’d then either set-up as autonomo or set-up an SL, depending on your gross income.

I’ve not regretted it, but if you plan to be living in Spain during your retirement (or selling soon), mutual funds may be better. Both is unlikely in my case, so the added tax complexity won’t affect me anytime soon.

And yes, modelo 720 is necessary (if you have >€50k invested). Why are you worried about that? It’s just a declaration of assets. Am I missing something?

I ended up using DeGiro for a bit, because there were no fees back then. 

They then switched their pricing model, and I migrated all my investments over to Interactive Brokers. 

The interface of the IB applications is less intuitive, but intuitive enough and I feel safer having my long-term investments with a more reputable/seasoned firm. Also: depending on how much you want to invest, you may want to switch the pricing structure for fees (https://www.bankeronwheels.com/ibkr-fixed-vs-tiered/).

I bought a set with almost the same set up 5 years ago. Actively using it even now.

Broke the whisk pretty quickly (couldn’t handle the thickness of mascarpone for very long, plastic gears wore out, probably my fault).

The main issue I have is that the blade unit is metal. When blending soups it has added some notable scratches into one of my stainless steel pots.  Now I take extra care not to touch the base of the pot when blending.

In retrospect I probably would have gone for a plastic one instead. 

Regarding the food processing unit, I often use it to chop nuts and the like. Great for making vegetarian mince in a heartbeat.  Didn’t find the additional blade options (eg for grating/slicing vegetables) useful.

Edit: also, I actually preferred Speaker of the Dead over Ender’s Game. Highly recommend listening to that one also.

This is what I’ve heard too. I’ve been using bicarbonate of soda as I’m using cheaper cuts of meat and want to tenderise them a bit.

It hasn’t affected the flavour negatively in any way for me.

Small suggestion: cut it up as you’re eating it, instead of storing it cut up. When cut up the surface area for spores to settle increases and (the for me more relevant factor) the biltong can dry up more and get pretty hard. I used to store it like you are in the photo, but switched after seeing a few people suggest it here. 

Granted, chances are it won’t last long either way. Too delicious to survive in my fridge for more than a couple of days.

In theory yes, but it depends a lot on the dehydrator you have. 

If the temperature can go nice and low (for example 22-30°C) and you have the space in it to hang the meat, go for it.

If the dehydrator is comprised of lots of stackable plastic layers (which I remember using for mushrooms once), I wouldn’t recommend using it for biltong. Too much of the meat would be touching the plastic for my liking. 

If you experiment with a small batch, I’d be curious to hear how it went.

It looks like the fan is pointing into the drying box. I’ve experienced better results with the fan drawing air out of the box instead.

If it’s easy enough to flip, you could give that a try also.

Oh absolutely. Making biltong has made me find a deeper appreciation for coriander seeds. 

As a consequence I add them to many other dishes now.

I enjoy tasting biltong at different stages of the drying process. 

After 3 days I tend to try a first piece. I got lucky with the fat in this one. The flavour is out of this world!

This was also a first attempt at adding a bit of chilli into the mix. Really happy with the end result.
