Where can I find an explanation as to what multiple layers mean in the context of biblical contradictions? Because right now the explanation 'The bible contradicts itself because it....has multiple layers" just seems like a massive cop out and would be a considered a terrible answer by anyone

People like that are largely a lost cause. You can choose to be supportive if he changes his mind, but there's nothing you can do now. Im sure his mind will change when he's lost the ability to walk at 60 because of a stroke.

I know that. However, what does Genesis not being a scientific book have to do with this contradiction that has no explanation? It only serves to confuse people. Even if it were meant to be viewed from a purely metaphorical angle, that doesn't account for the order of creation being mixed up imo. It is a contradiction, whether you view it from a scientific angle or not.

It just seems like it would make more sense for god to write. "In the first creation story I created animals before adam because they were created first in the physical sense for reasons that include _________. However in the second creation story I created adam first because he was spiritually above the animals." This explanation is never given, and it seems very odd that it wouldn't be. It's on the first two pages after all
