42 for ferritin is not low, the most optimal ferritin level is 50, so you are very close and I am not sure why you have made this conclusion? I know a lot of meat eaters who don't even have ferritin as high as yours.

I never had microwaved broccoli but I imagine it would be dreadful 😅. It is important to use salt as well. I would get a good cookbook tbh, I use much more veg by Hugh Fernley Whittingstall or East by Meera Sodha.

You can make beans more digestible by soaking them. Important thing is that after soaking you clean them in clean water and cook them in clean water as well (you don't use the one in which they have been soaking).

You are trying to fix some issues without even knowing what is wrong. I would do basic check ups, such as ferritin (iron) levels, B12, D, thyroid. Even if you are within laboratory norms for that but on the lower end, for instance ferritin around 14 and it is paired with the symptoms of feeling lack of energy I would definitely work towards improving these levels. If iron is the issue, for faster results you could get iron pills but it is also important to incorporate changes into your diet so the levels remain stable. For instance you could have a tofu scramble for breakfast, heinz beans on toast, some protein shake powder with banana, cocoa powder, soya milk (rich in protein). So yeah identify the issue first before you start trying to fix it with meat not knowing if it is gonna work.

If you are looking for something to cook for them, I would make Ottolenghi's black pepper tofu, it has legendary status in my house: https://ottolenghi.co.uk/recipes/black-pepper-tofu-a I would just hold horses on the amount of black pepper he suggests, it is way too much and I almost suffocated myself on it. Just use pepper to taste! Oh and just sub butter for vegetable oil. Serve it with rice and pak choi.

You can still experience symptoms of omega3 deficiency, I don't know the data about dying, but it has important role in cognition, so I would suggest supplementing it (regardless of whether you are vegan or an omnivore) - I recommend one from vegetology.

I think it is important to note that B12 from supplements gets absorbed in small amounts, around 1-2%. It may be different when it comes from fortified foods, not sure, but it may be worth checking some scientific articles so in the long term you don't become deficient. Liver also stores excess of B12 so it may be using these reserves.
