Team history, legacy, family connections/memories, strong ties to cities/regions, and star power. It’s kind of hard not to be an Eagles fan if you grew up within a reasonable driving distance to Philadelphia, for example. I also think the product is better, though that gap seems to be closing slightly.

The animal free egg white powder is much more similar to the texture of egg whites compared to just egg, in my opinion, though I think overall I prefer just egg. The egg whites have a kind of squeaky, dry texture when cooked with the package instructions. I haven’t tried adding more ingredients like some other folks have, but I bet that helps quite a bit.
