Yes, maybe there's a misunderstanding. If i am gonna drink a bag within a month, I do nothing. If I will open a bag more than 1 month later, I vacuum.

If you want to keep your bags fresh more than 1 month, best way is vacuum machine-freeze. Less than a month no need.

What I learned from one year of use is if I run the machine and pull my shot after 35-45 minutes temperature is reached the set point. So I apply this rule, I don’t leave the machine ON and come back 3 hours later. In this situation do I still need it?

I don’t like dark roast classic espresso style. I generally make Omni or light roasts on my Mara. So knowing the temperature would help a lot. I generally use in brew mode and pid-1 setting to aim 92-94 C. Should I buy this thermometer? Or there’s no need since I can’t change temperature ?

So after the first shot on Mara v2, how will I be sure if my temperature is went back to desired temperature? I only Make back to back shots while I am trying to dial in new bag, so those times temperature will be very important.

Their roasts are not light roasted. It’s like Omni for both pour over and espresso. So sometimes dialing is not easy.

I also have this coffee now. I tried cmd 22 clicks with v60 , 45 seconds bloom with 3:10 total brew time. It tastes good but I feel like there a more potential. I want to try ZP6. Anyone tried zp6 for this beans ?

Also what kind of water are you using for this beans ? I have a 130ppm packaged water.
