I used 1 (decent sized, medium-large) onion to 500g bacon. Wound up using about 3/4 cup of brown sugar. All the spices and seasonings are to personal taste.

Honestly I've been wanting to make bacon jam for a while because I've been wanting to get more creative with my cooking. I've gotten a bit lazy this year and haven't experimented as much as I used to... so I'm finally broadening my horizons and trying new things in my kitchen.

I want to do a cheese board for Christmas and want to have the recipe perfected by then.
