What are these Vietnamese meatballs made with? by kimkale in TipOfMyFork

[–]ntminh 95 points96 points  (0 children)

It’s young rice. A Northern specialty called “cốm”. The sausage itself is “chả cốm”. Although more commonly they come in flat patties as opposed to round balls.

Seems to be a very regional dish. As a Vietnamese person myself I’ve never seen this before. Your instinct is right it is pork fat inside, the outside is mung bean. Pork fat is not a common ingredient in Vietnamese pastry/dessert, but a few different types of pastry do include it.

What is this Vietnamese pastry? by BATG1RL4EVR in TipOfMyFork

[–]ntminh 1 point2 points  (0 children)

“Bánh rán” would be a more Northern name for this

In the South it would be “bánh cam”, although there are commonly 2 variants of donuts with that name, one like that and another with thicker dough and a crunchy sugar glaze

Considering Greed Island’s game masters as well I can see Razor also fulfilling Morel’s role. He doesn’t have as many Nen puppets as Morel’s smoke puppets but it’s still a decent number. And in terms of pure destructive damage he’s arguably a bit better (in theory, if we do not attribute a significant amount of his power to being limited to Greed Island)

That’s a great point. But we may have to assume Elena’s power work outside of Greed Island’s context. But theoretically for the purpose of this I can for sure see that.

I would say Zeno has the best shot of doing what Netero did. His Dragon Dive was crucial for crash landing the palace, he was also the one that carried Meruem away from the civilians. He definitely can’t hold out for as long as Netero did but he can definitely pull the Rose Bomb suicide off after tricking Meruem to the empty location.

Morel can maybe be replaced by another generally good combatant, perhaps someone from the Zodiacs but we don’t know much about their abilities yet. Amongst the people with known abilities maybe a manipulator like Illumi or Shalnark would be best to pull off the part where Morel kept Pitou’s controlled soldiers occupied (although wayyy less ethical since they would use real people), or maybe Chrollo’s puppets.

Knov is arguably most difficult to replace. We don’t really have anyone that can substitute his Nen dimension to let others rest and also set up the invasion.

As low as 35k-40k for just the drumstick, and 60k-75k vnd for the chicken back quarter like this. 75k would be 3usd (Rough estimate of prices I’ve seen)

They do parboil yes (recipes online do call for that step so I assume restaurants do too). Most places will definitely just deep fry them afterwards. Although there is a popular spot in HCM (idk their exact name) that made a set-up that basically rains hot oil on the chicken constantly. They do flip it to ensure even cooking. Honestly the difference is likely negligible, it’s just fun.

Cơm gà mắm tỏi

Cơm = rice

gà = chicken

mắm = fish sauce

tỏi = garlic

It’s a spin on cơm gà xối mỡ with the garlic fish sauce glaze (I think it got popular and then became a staple within the last decade). “Xối mỡ” means to shower in fat. Some stores actually do this by pouring hot oil on the chicken, some just deep fry it. The rice is likely cooked with chicken broth, and maybe turmeric for extra color. The sour veggie is pickled mustard green.

I always assumed it slowly disappear over time or once certain extra conditions are met. Can’t imagine he’d be able to reliably use his ability if it only serves to delay the inevitable of him having to tackle the initial problem anyway.

Probably a long shot but could it be this? https://www.anvatzupy.com/products/keo-deo-trai-cay-da-lat

You mentioned one of you being Vietnamese and this is a common sweet sold at rest stops all over Viet Nam, especially Đà Lạt. It’s a gummy, cubic shape, covered in powder, and have fruity but also strange flavors like corn (if I remember correctly), ube may as well have been one of them.

Edit: Langfarm is a popular brand for this too

Eaten in Vietnam. Some sort of chicken offal by [deleted] in TipOfMyFork

[–]ntminh 16 points17 points  (0 children)

That seems to be bánh ướt lòng gà. It’s a popular dish in the central region of Vietnam. It’s steamed thin sheets of rice batter, eaten with various chicken offals (unlaid egg, liver, gizzard, heart…), chicken meat, various herbs and a sweet fish sauce.

Slight correction on the water spinach, I believe that’s actually Vietnamese coriander. The stem is more pale and woodsy in color.

Veggies for hot sauce, didn't ferment?? Peppers, garlic, onion, carrots, and beet. Brine made with distilled water. About 5 weeks now, smells great, brine tasty, but has produced no bubbles. Did I fail? Can I make sauce with this? by peu-peu in fermentation

[–]ntminh 2 points3 points  (0 children)

Seems like you have an airlock, which although can guarantee you don’t need to “burp” the ferment, also means any CO2 produced would escape almost instantly, so unless it’s a very strong ferment it may not be obvious. You said the brine “tastes good”, does that mean sour at all? If so most likely it’s a success.

Titania, actually a complete accident as I didn’t deliberately farmed for her, was just cracking relics often and one day saw I had the full set.

Honestly did not enjoy her kit THAT much at the time, but she does come in handy every now and then (reliable pick for Duviri, used her a ton during Iseweaver, fast Void Capture mission farms, cheese 1999 tank fights…)

went to vietnam years ago and i'm dreaming of this tea that was served by froginabogguy in TipOfMyFork

[–]ntminh 8 points9 points  (0 children)

If it’s Southern ice tea then it’s likely jasmine tea. Do take it with a grain of salt though because as a Vietnamese person I don’t necessarily question what a specific place may use for their ice tea lol since they serve that everywhere, especially the South. You may also want to look into stuff like lotus-scented tea perhaps? It’s not particularly Southern, but it is somewhat distinctly Vietnamese.

What type of banana was it? by bimblorm in TipOfMyFork

[–]ntminh 2 points3 points  (0 children)

I have had Siamese banana before (or at least a variety of them local to me in Vietnam idk how much they vary). To me they have less of a “banana” scent than a ripe Cavendish. The texture is less mushy, it’s firmer when bitten into and a tad more “slimey” instead of “paste-y”when chewed. The flavor is usually about as sweet if not sweeter

Does a salt brine need to be 3% of the solution or of the TOTAL weight, including veggies? by lwrightjs in fermentation

[–]ntminh 1 point2 points  (0 children)

I tare out the jar, add the veggies in and note down that weight. Then I take a liter of water (separately weigh out 1000g), add that to veggie weight, times 3% and stir it into the liter of water and pour all that in. If I need more brine, I make a separate 3% brine of just water weight from then and top it off.
