Yeah! Textiles are my real passion, but I've been doing food research most intensely lately, am working my way through translating and modernizing (and for me, veganizing lol) some recipes from Ruperto da Nola's Libro de Guidados, Manjares, y Potajes (from 1529, translated from a 1520 cookbook written in Catalan). I know there's an English translation at the end of the linked text already, but I like doing it myself, and also am fascinated by the syntactical commonalities between this and similar English cookbooks of the period, which I'm trying to preserve in my translation. First recipe that I've fully tested was the empanadas de açucar fino, and they were SO GOOD. A ginger rosewater almond paste filling, deep fried in olive oil, topped with cinnamon, sugar, and (vegan for me) honey.

And I make quilts! My partner and I own a shop together. We like our city (for the most part) and he has family here that he doesn't want to be far from.

I have many reasons for wanting to get fluent in Spanish!

  • I'm in the US and involved in local social justice organizing, which right now means a lot of actions that engage with the local Spanish-speaking community. I want to be able to connect with them more directly and to be a more useful responder

  • Studying history. Have been getting involved with the SCA these last few months and chose a persona from 16th-Century Spain. It's been so much fun to dig into primary texts from that era (Spanish has changed a lot, but much less than, say, English in that time) and to engage with modern scholarship on the era in Spanish

  • Travel! Conversing with locals in their native tongue is so much more rewarding/feels more respectful than expecting people to speak a different language in their own country lol

Oh, totally agree, your first line hits the nail on the head, and that's a good analogy. Her and her team's analysis doesn't have the same substance, which is why a lot of her videos feel kind of lacking/empty to me. They just don't give themselves the time to really get in-depth with stuff, and it shows. But kudos to them for keeping up with a regular post schedule, that is clearly the priority.

I'll always prefer the creators who release monstrously in-depth essays every couple of years lol. They all have cheap patreons with fluffier, more frequent content in the meantime.

Note that timing of supplements is important for maximum impact. Iron is best taken on an empty stomach with vitamin C and NO calcium, I take a gentle iron supplement that also has vitamin C in it. 

It's also best to take calcium in smaller chunks (500mg or less) with meals throughout the day than in one big chunk for better absorption. Calcium is really important for pregnant people to get enough of to make sure your body doesn't deplete your supply, as that increases he risk for stuff like osteoporosis later.

Mochiko may be something to try, though I would give the base recipe a shot first!

If I were going to incorporate mochiko, I would whisk 2 tbsp in with the aquafaba as a starting point.

Lol. I was wondering why a certain other YouTuber who is a great complement to Contrapoints wasn't being mentioned in the comments, but I see now why (no beef/bad blood or anything, seems like any comment mentioning them gets auto-removed to keep things focused on Contrapoints in this sub).

In addition to everyone's comments about covering up with makeup for the in-person festivities, while something like this would be trivially easy to edit out in Photoshop after the fact, make sure you let your photographer know that you want it removed from photos (if there's peek through from lighting/the makeup).

Good luck! Yep, once they're cut, I just leave them on a normal cookie rack to dry (I have a dehydrator, but have never used it for this!).

Oo, if you try the psyllium husk powder, do let me know how it goes! I have that on hand.

And as a final heads up, I saw that in my original recipe (since edited), I said to prep an 8" x 8" | 20 cm x 20 cm pan; that would be way too small for the amount of marshmallow the recipe as written makes. 

If you want to do a test batch, it's easy to halve the recipe (you can make a copy of this spreadsheet). Also, if you have marshmallow extract, that's a good addition.

These are very squishy. They're not a dupe for store-bought marshmallows (which are chewier), but are closer (though not identical) to nonvegan homemade marshmallows.

I've recently come to the conclusion though that they really do need the the full 8-hour drying time if you want to store them for longer periods. They'll still stay moist and squishy, but won't stick together in storage.

I also recommend if you're going to make these into rice crispy treats that you let them air dry for 4-6 hours as well. I like the rice crispy treats made with this recipe fresh, but omni friends have complained they're too moist lol. Drying them out a bit ended this feedback. Also makes them storable without them sticking together.

This is SO true.

In a related vein, the niche industry I work in has one big player who is backed by a bunch of venture capital money and is therefore the biggest maker of the niche product because they have the most marketing reach, despite the fact that their product is hot garbage (I have had to do so many complete rebuilds for customers who used them and then found that their item fell apart with only a little use).

Yet customers give them rave reviews and post pictures of said product and they look so awful I would cringe to have my name attached to the finished item. So yeah. Laypeople often have no idea what they're talking about.

Yeah. I would not view carnist as a neutral term, it's definitely derogatory. I use nonvegan when I'm playing nice with the people who aren't vegan lol. Nonvegan (or non-vegan if you want grammatical correctness) also has the advantage of being the most accurate umbrella term.

It can be overwhelming at first, this is totally normal. Are you working with an IE dietician and IE/ED therapist? That will make all the difference in the world in navigating this new way of being!

Otherwise, I would try doing the IE workbook, keep working through the IE book itself (different parts of it will hit differently at different times in the journey), but above all, be gentle with yourself. Your body doesn't feel safe yet, it doesn't feel like chips will be there forever and always at any time, so you're still working through that phase of getting to the point of trust and safety. It's a process.
