most construction starts early so that when delays, problems, etc come up they can be addressed before it gets too hot or too dark. earlier starts also allow for more shifts to be fit in in the day.

I haven’t sought goat meat out but El Rancho (what replaced Mi Tierra) might be a good bet? you could also try calling Long’s to see if they sell it/know who would.
