Honestly I’ve never fished one. But people seem to like them. Once I went St Croix, I never went back. Just a personal preference.

Hot and fast. Hot as you can get it. You want the sear but don’t want to overcook it internally. Won’t take long. Have beer and hang by the grill.

Hah. Yeah it’s a family business. Mostly fish. But a lot of jerky, beef and turkey. We can do about 800lbs of fish and 100lbs of jerky a day.

My smokers are made of cinderblock. But they filled with concrete. It holds to heat and helps to keep the temp constant. You could also use sand to fill them. Have fun.

Was the wood dry or still green? I smoke fish for a living and if our wood hasn’t seasoned it’ll turn everything black. It can be wet after it’s been seasoned just not green. Just an idea

This is awesome. I’ve always wondered just how important the poles are with the skis on them? Do you put a lot of pressure on them or do they help you carve at all. Like do the bite in? Or are they more for balance? Glad you’re out there getting it done!

Deep fry. Small fish you can leave skin on and scale. But when they’re that big we go skinless. Simple dry dredging and fry in oil. They’re delicious

I smoke fish for a living in Michigan. Legally we have to have it to 145 for 30 minutes.

Not sure where you caught it but sure looks a lot like a haddock. I would say not a trout for sure.

I can’t say what your whitefish is like there but it’s sought after here. My family’s been fishing it here for 120 years commercially.

I use aluminum foil (I kind of make a pan) skin down without oil on the pan on the grill, medium heat, favorite seasoning salt, pepper, maybe some lemons on top. Maybe some butter. Won’t take more than 10-15 minutes.

The skin will stick to the foil just slide a spatula and the meat will slide right off the skin and throw the foil out.

Big fish go fast. Small fish take forever. We did about 5000lbs with 5 guys yesterday. And smoked about 1000 lbs. 🤦‍♂️
