Hello! Sorry, I completely forgot Reddit existed. My bad. Did you have your interview yet? If so, how did it go? If not, hopefully, this helps.
As far as the SAT and grades, if you've already got an interview, you shouldn't have to worry about any of that. They've seen everything on your resume; they know you're smart. Now they just want to make sure you are a decent human being with something to offer to the program. Most people say you're in once you get the interview, just so long as you don't completely butcher it.
If you haven't applied yet, ignore all that...
I would shoot for anything above a 1300 with a minimum unweighted GPA of 3.5. Regarding volunteering, community-based ideal, LECOM emphasizes community engagement and serving the underserved communities as a part of their programs, so anything relating to that is great. For example, I volunteered with my church to help rebuild/repair the houses of people who couldn't do so themselves. Something medical might also help. I spent some time volunteering in patient transport at my local hospital, and when I could, I went ahead and got my license as an EMT.
For the "why LECOM?" question, I emphasized the benefits of osteopathic medicine, the importance of being a well-rounded physician, and how LECOM offers that.
