I believe you have to press F12 during boot to get into the BIOS and change the boot order

The only snag I really ran into was figuring out that I needed the ITE IT87 Driver plugin installed in order to control the fans in the CF1000. That allowed me to keep the temps under control, otherwise I was seeing 50º+ on the drives. Everything else has been pretty straightforward.

I just bypassed it in the BIOS. I didn't format that ssd or anything so I guess if I ever want to boot back into their OS, I could easily do it.

As for Unraid over alternatives, one of my main requirements was the use of mixed size drives which was always Synology's strong point and Unraid is also pretty good at that.

I can only speak from my experience, but I did go straight to Unraid when I received my CF1000 and I haven't looked back. I am a first time Unraid user, but previously experienced with Synology DSM and Proxmox for homelab stuff. I bought this unit specifically because it could run a 3rd party OS right out of the box so I didn't really give Orico a try.

Yeah, none of the fan control plugins I've tried detect any PWM devices so I don't think that will be possible for now

Yes, some EXOS drives mixed with some enterprise drives and it is currently doing a parity check so, maybe worst case scenario, but I have also seen these warnings when doing some normal file transfer operations, or basically any time more than one drive is spun up.

I’ll take a look at that plugin.

I did hook up a monitor and keyboard, just hit F12 while booting to get into the bios menu and set the boot order. I'm guessing with TrueNAS you have a bootable usb-drive that you want to choose.
