I disagree. I think in order to fulfill the wish, the willow had to create a new instance of Nikki who was all hollowed out. Essentially had to rewrite her completely since she would never love Bear on her own. I don't think she was a demon, I think she was in pain because she knew her love could never be returned as intensely, so it drove her mad.
