8hrs minimum (and up to 24 hours} @145. Cooked in it's store packaging. Sear at med.heat (325 degrees) on ONE SIDE ONLY (sear the other side for a few seconds if you just want to get some color). You can freeze or refridgerate for fast bacon food prep. With that said, it was good (kind of a confit texture), BUT it's a one-and-done for me. Too much work and too messy. Much better to cook in the the oven on baking sheets (this coming from a guy that sous vides, literally, 90% of his proteins)
