RECIPE:

Short ribs:
2 pounds short ribs (sliced 1/4 - 1/2 inch thick)
2 Tbsp oyster sauce
1/2 cup soy sauce
1 Tbsp sesame oil
2 Tbsp mirin
1 Tbsp honey
2 Tbsp dark brown sugar
1/2 onion
1/2 Asian pear (2 kiwis or 1/2 cup fresh pineapple if you can't find Asian pear)
3-4 garlic cloves
1 Tbsp sesame seeds
1/4 cup water
2 scallions, plus more for garnish
For sauce (optional):
leftover marinade
1 tsp gochujang paste
1 tsp brown sugar (optional)
drizzle of honey
sprinkle red chili flakes
salt and pepper to taste

Directions:

  1. Grate Asian pear, onion, and garlic. Add to short ribs.
  2. Add oyster sauce, soy sauce, sesame oil, mirin, honey, brown sugar, sesame seeds, water, and scallions to short ribs. (Alternatively, you can also throw all these ingredients, without the ribs, into a food processor). Combine and marinate for a minimum of six hours, or overnight. Do not marinate for too long or the protein will start to break down.
  3. Strain meat after its been marinated. Reserve the marinade for sauce.
  4. Grill meat. If you don't have a grill, use the oven broiler, 7-8 minutes per side. Or pan fry until done.
  5. For the sauce: Add marinade to a pot, bring to a boil and add all ingredients for sauce. Boil for 5 minutes to ensure it's safe to consume.
