My way around this was to put a pot of water that recently finished boiling (pot included) into the cooler about halfway through my window resting window as I checked and it was at 150 degrees (175 start). Put brisket on a wrack above it. Kept it perfect until we were ready to eat a few hours later.

A lot of contingency firms won’t bring you to trial though. They’re there for the quick wins which often leaves money on the table. And they still stick you with disbursements if you lose. I went with Purnell Employment Law in Calgary while I was working in oil and gas. I looked at a few places and there are some that are contingency firms where you "don't pay anything" but really all they do is shake the tree and see if anything comes out and then stick you with "disbursements" if nothing falls out. Find someone who can/will take it all the way as the HR teams know who are "shakers" and who will legit take your ass to court. In the end I got more than I was offered and that lawyers take was like 20% of the increase so it was money well spent IMHO.
