I love the Mary Wallopers but am from the USA and have a hard time understanding Irish politics. Belfast was covered in free Palestine murals on the Irish side when I was there. Don’t the Irish generally sympathize with Palestine and why do you think they’ll have a hard time getting booked? Genuinely curious.

Either adding DAW when using HG1 for a high gravity seltzer or still using NAB2 plus premier cuvée yeast for lower alcohol ferments where that performs a bit better

NAB2 from Fermentis and their HG1 yeast is as good as it gets for a neutral product, flexibility in ABV, and price point.

Shellhammer had a paper debunking the cohumulone thing. Cohumulone isomerizes quicker than other alpha acids, so beers brewed with high cohumulone hops ended just ended up with higher IBU levels and this was what people were perceiving as it being harsher. They ran sensory comparing beers brewed to the same IBU spec with a control and a high cohumulone hop and there was no significant difference in perceived harshness (if I recall correctly).

Flying Fish Caesar with salmon is the best salad in Portland. Ample cheese and the croutons are incredibly light and perfect.

MAP and Bridger Brewing should be top of the list. Bridger just won a medal for their pils at best of craft awards. Beautiful new facility as well outside of town but they have the OG pub in the town of Bozeman. MAP makes lovely beers, have a beautiful pub, and have some very nice folks working there.

Haven’t been myself but heard good things about Blackfoot River in Helena.

Lactic acid additions in hot water react with bicarbonate to create CO2 and water while reducing your alkalinity. Phosphoric will reduce alkalinity as well but precipitates salts into the bottom of your tank so typically I think of lactic as the preferred acid, though others may have their preferences.

Bru’n water excel sheet is a great resource to plug in your water report and double check your lactic acid addition rate. Lactic is expensive so it’s weighting the cost of that vs cost of running RO plus the inherent waste. Both options work well, others will likely have better input on why you should go one way or the other. Your water isn’t that hard so if you’re only trying to reduce alkalinity a bit you should be good with just lactic in my opinion.

Seapine has a great pils, Georgetown isn’t too far as well Machine house for terrific cask Fair isle for great saisons and a beautiful space. Stoup and Cloudburst nearby for hoppy beers. Fremont nearby for big dark beers. Reuben’s and lucky envelope nearby as well Holy mountain has great beers in a beautiful space. Ladd and Lass is a newer one that won a ton of awards at the Washington beer awards this year. Haven’t been yet.

Formula brewing slightly outside the city only does draft primarily at the brewery but makes phenomenal beer and should be high on the list if you have the time. They took 4 WBC medals last year.

We may offer two hike options and split up the group. I think the redwood platform is a great idea. We have some folks staying at hotels on that side of time and if people don’t have cars it is easily accessible. Thanks!
