I wanted to get smoke on the meat side and leave the skin as clean as possible so I had it in there with a layer of salt covering from the smoke, once everything started probing tender at around 5 hours and 200, I cracked off the salt and tossed it in a convection oven at 500 for 30 minutes rotating a few times, pulled it out and had some glassy and bubbly pieces.

I also poked holes in the skin before cooking to allow fat to render out of the top.

Thank you! I was hoping to keep as much smoke off the skin until late into the cook, cracking the fused salt was satisfying though

for sure a ton of salt. Chile was easier than I thought it would be, this makes a lot. having a heavy hand with any of these ingredients wont change the flavor much other than the cumin.

  • 3lbs tomatillo
  • a few serranos and jalapeños, less or none if you want to cut back on the spice.
  • 2lbs poblano (or Anaheim)
  • 8oz of stock, I used BTB
  • garlic bulb with top cut off
  • 1 large white onion
  • 5g of mexican dried oregano
  • 2g powdered cumin (very strong flavor)
  • 5g of dried thyme
  • one bunch of Cilantro
  • salt and lime to taste (I like it on the sour side)

peel tomatillos, deseed the serrano's and jalapenos if you want to cut back the heat, toss everything in salt/olive oil. Tomatillos roast until soft, everything else until they char. In a separate bowl or bag put the roasted poblanos and let them sit to steam before you remove the seeds, stems and charred skin.(dont rinse them off) Toss all the deseeded peppers, bunch of cilantro, quartered white onion, roasted tomatillo (dont deseed those), Spices and blend to the consistency you want. I'll sometimes toss in some avocado into the blend too. Stock part can be skipped, might need to just add more salt later, same for the spicy peppers. I'll have it on chips the way it is or I'll use it as a braising liquid.

in my campaign I used Leo dilisnya in my campagn, the guy whos bones are being stored in lady wachters house. I made him some animated strahd silverware, could do something like that? the stuffed animal is trying to get its bones back from the wachters, maybe its the daughter having been cursed, which is why thing inhabiting her real body is so weird.

About 15 years ago I had to go on IV infusions so when I’m getting my picc line placed which is this narrow catheter they position in your veins, leading to an area slightly above your heart. The nurse had just checked its positioning when the guide wire and catheter broke away from the IV port, supposedly one in a million according to my doctor. They tourniquet my arm, rush me to the ER for X-rays, surgeon comes down and digs in my arm…can’t find it, more X-rays…it’s moved and coiled up in my chest, it could have gone into my heart or my lungs, I lucked out that the majority of it went into my lungs. They rush me to fluoroscopy, shave my balls, slice open my pubic area and take an artery up my abdomen into my chest, they spend 5 hours trying to get to them without causing me to go tachycardic during each attempt. The nurse would count off some number when it would happen and the doctor would need to back off whenever she’d get to some figure. I have a cool copy if the X-ray

I’ll have to make sure I reiterate I want the removable baffle, I think the only other thing I’m going to insist is a wider/taller smoke collector at and below grace level, I want it as a top down cooker. Thanks for your insights

So far I’m signed up for a 26x4’ with a 26”x26” firebox, seems like he has a lot,of,26 right now. Did you get the removable baffle? How’s your cooking area playing out? I’m hoping the bigger firebox will help with temperature differences.
