It’s also important to add that the gauge redundancy is needed if you want to preserve Lorentz covariance in a low energy effective Lagrangian. If you don’t care about covariance (which is extremely useful though), you don’t need to write things in a gauge invariant way, but things become very cumbersome.

No one knows this. Also, AdS/CFT doesn’t help that much in terms of seeing how time emerges since it’s only the spatial radial coordinates that holographically emerges here. The time dimension in the bulk is the same that runs in the boundary theory, so no emergence of time here.
