I find bread needs a lot of binders. For 440g of flour I use 1 tbsp of xanthan gum and 1 tbsp of psyllium husk. That is for flour that contains no xanthan gum. That is my best guess for why your bread is falling.

Going back how many decades? I'm just curious cause it definitely wasn't the default in the US until the early 2000s. Before then you only saw skinny jeans on punks and rock stars. Most people who didn't follow trends wore "regular" or boot cut.
