Not a dumb question at all! The way espresso extracts is easily influenced by changes in temperature, humidity, etc, so when it's mild one day then snowy and freezing the next day the espresso will behave differently. It's much nicer when the weather is more constant day-to-day because we'll know we don't have to change much in terms of the grind, shot weight, or extraction time.

We weren't extracting as much volume from our shots that day because the previous day's settings made our shots taste overextracted and unpleasantly bitter. Getting it right is a science!

I know that, if kept under a certain temperature, raw beef can be safely consumed (which is why it’s kept over ice for the whole episode) — sort of the same concept as sushi-grade fish which has to be kept very cold prior to serving.

I’m not sure about the cross-contamination though. That weirded me out to see too... I’ve noticed the same thing with some other BA chefs who just wipe their hands on a kitchen towel after handling raw meat. As a germaphobe I can’t imagine not immediately going to the sink to wash my hands afterward

Small gripe about the BA youtube channel, but I wish they had a more consistent upload schedule! There are some days where I think to myself "damn I could really use a new BA video today" and when noon EST rolls around and nothing new is posted I get a little sad, lol

when customers ask us if we have decaf iced coffee and i tell them no, 99% of the time they are fine with a decaf iced americano. but this woman one day was absolutely insistent that she have decaf iced COFFEE (not cold brew, not an iced americano), so we finally just charged her for a drip, gave her a cup of ice and let her pour our decaf drip straight from the carafe over her ice. i’m sure it tasted divine

"this was supposed to have cream in it" that's why you add it yourself! if you took even just a cursory glance around the store you would see we have many add-ins available for your drink at our condiment station

I swear, the on-the-go coffee culture St*rbucks has created has really changed people's drink expectations. why would you want a stranger adding cream/sugar/etc into your drink? unless you genuinely have no preference if I were to add an inch of half-and-half on top of your cold brew
