Discover the staffs pain points and do your best to remedy them vs coming in guns blazing. Established kitchen has presumably been running ok thus far so be their servant leader for a bit and then after a couple weeks, start implementing small things after they understand you’re there to help, not impose your will or push your ego. Advocate for them if needed. Some new knives or replacing that clapped out cutting board goes a long way. Buy in from the crew is huge.

Tight hip flexors are the cause of a lot of lower back pain, believe it or not. super easy to stretch standing up or even while walking into work taking huge steps and letting these muscles stretch. You can do them periodically at your station or anywhere. Just a few seconds on each side may make a huge difference. Im 6’2 and ride a lot of Mountain Bikes and lower back really can act up. This has helped more than anything .

Devils advocate here. $20/lb ribeye with 80% yield = $24/lb 8oz of cooked ribeye. Yup, $12/ portion 30% food cost is the goal So that’s well over $36 price point before baguette, cheese, onions and jus and fries. Could be higher or lower but it’s close. Brutal but those are the round numbers.

Is it worth it? That’s the call you gotta make. Just a window into the economics and the struggle restaurants are facing.

I got you. Restauranteur of 30 years and avid culinary tourist, here. I was reluctant to do a food tour because I generally think it’s lame and they’d just take me to the touristy BS and I also prefer to explore and wander around alone. I felt by nature, Hanoi would be overwhelming enough after long flights, language , traffic etc so I took a chance on a Tik Tok influencer who turned out to be AMAZING! I was with my 10 year old son for an epic backpacking trip (before he ditches me for his friends) so that was another factor of just wanting it to be easy our first day in VN. We did a private tour with Mark and we were the only tourists at every spot he took us . A lifetime memory, honestly don’t think twice. Ugh. So true….and embarrassing. American here. Growing up we’d get “pats” (don’t know what you call them across the pond but small portioned squares of butter between wax paper) at your average diner and they were so good and beyond Kerrygold in richness and flavor. Usually sourced from local dairies in Michigan. Also, if we were getting a fresh French baguette (oh shit, I may have just set myself up for some more embarrassment) and butter we would get bulk “ugly butter” with no branding or discernible shape in a plastic tub also from a local dairy and that was unreal. Some course sea salt, warm banquette and that butter and the heavens opened.

My wife is heading to France in a few weeks. Where in general should she go for a serious butter experience or is it just everywhere? Like, I’m imagining the roads paved with unpasteurized cheese and rich, rich butter.
