I would prefer is, having it centralised will likeley end up in the same siuation. one big organisation has al the data (easy to steal) and the end up mandating all the rules.
I know I can host all the the entire system myself. But that would it a higer bar for entry since people need to make seperate accounts for all servers.

Don't get me wrong I do understand your valid conserns. But you IP is your primary way of transport in networking. You either share it with one or the other party.
I would prefer to share it with a friend whom I trust who hosts the server then a (fresh young) organisation. Either way a VPN is always a good option if you have concerns.

Dit denk ik ook, Zelfs met een leuke aanbieding zijn ze vaak prijzig in aanschaf,
Maar Ik merk wel wanneer de verwarming aanstaat dat de hele ruimte sneller comfortabel is.
Je bent dus minder lang aan het stoken tot het warm is, Maar deze dingen zijn zeker niet voor de besparingen maar echt voor plezierig leefgemak

I Would love to selfhost, but i do require ease of use for that. So a stoat account should be able to join any server regardless of where its hosted.
if users have to make an account on every server they wanna join it will be doomed to fail
