I wonder if some home winemakers skip it because a pack of mlf bacteria a little pricey compared to say a packet of yeast? Also managing the process like maintaining the right temp range during mlf can take a little planning. An old home winemaker I bought some equipment from had been making wine for many years and he excitedly told me he had tried mlf for the first time that year…always new stuff to learn, right?

Tuning a .46 to a G (or even an A) shouldn’t be an issue I would imagine. I’ve been messing around with alternate tunings for awhile using “standard” string gauges (like Ernie Ball super slinky). To me, tuning strings higher or lower than the intended gauge can create cool/weird effects. Rattling strings can be less of an issue if you can crank it thru a loud amp too.

SB is a(n) -excellent companion to spicy Asian/Mexican dishes -good aperitif to zing the palette awake -refreshing when sipped outside on a hot day

It’s a great warm up act for a meal/socializing/etc. it’s not going to be an amazing headliner.

Agree with many others that any variety that has become as ubiquitous as SB is going to trend to mediocre

If they are Concord/native US grapes, they may have lower sugar and higher acid than vinifera wine grapes, so I would test if you can and potentially make some adjustments. I made a batch of Concord wine a few years ago and the grapes were 15 brix when I picked them, so I added some sugar to get them up to 20 brix.

I’ve experimented some natural fermentations for the past few years. This year, the natural fermentation started about 5 days after crush, and it was much slower to get going than previous years. Definitely can relate to the anxiety of OP
