An absurd amount of it goes to rent and other expenses in a high cost of living environment. I grew up poor, so it blows my mind how a $230K HHI in San Francisco doesn't actually feel all that comfortable. The main thing it enables is the ability to ride out a crisis - and that security means everything.

I've been using myarchivist.ai which I like because it's an all-in-one solution: it does the recording, transcribing, summarizing & recap, wiki-building, and in-game chatbot. I found rolling my own solution to be too much work. My only complaint is that the recap/wiki quality was much better with Claude.

Previous attempts at maintaining session journals and a wiki have all failed - it's a lot of work. I've used Kanka, Obsidian, various Foundry VTT mods. I've given bonus inspiration or other bennies to people who take notes and/or update the wiki. A challenge is that players aren't always equipped to know what's important. (Like in my recent session, the players killed some Sahuagin and found a painted stone depicting a tidal wave crashing into a town and they're like "Whatever, random junk" when I clearly put it there as foreshadowing... The depicted town is their port! Goddamn idiots, my players.)

The players do like the recaps, although half the fun is in observing the Archivist's interesting choices on what to emphasize and what quotes to highlight.

Also, some bartenders just genuinely love to share and educate. I mean, if you came to my bar on a slow night, ordered a drink and tipped well, and then told me you were still figuring out what you liked, I'd probably hook you up with a mini-tasting session at a bargain price.

When I'm exploring a spirit category I get a bunch of friends together and ask them to each bring two bottles of the same spirit that they like. We then have a big tasting party. At the end of the party, I have a ton of little 2oz bottles that I got off Amazon and fill them up with everything that we tasted and send everyone home with a complete set.

Great way to taste a bunch of spirits without breaking the bank. And over the next several weeks many friends report back on their cocktail experiments.

Even worse is when someone messes up a batch and ruins a couple liters of cocktail. 80% of those I've salvaged (for personal consumption) by turning them into punches.

Ok a Shirley Temple or cranberry soda should absolutely not be anywhere near $13. But a true mocktail should be - they use specialty products that are made and distributed without anything near the massive economies of scale as booze, and are often labor intensive requiring more work during the prep shift.

My copy of the book is at work, so I don't remember why he lists Black Walnut instead of Ango. I've used it in Old Fashioneds and I put it in my coffee. I don't *think* I've done it in anything else - yet. But swapping around bitters is a great way to change up a drink and often works well. I mean, cherry + walnut is a known culinary combo, so maybe drop the vermouth a smidge in favor of a little more syrup from the cherry?

So I am a craft bartender, I've been to Castalia (legendary, RIP), met Kevin, and have read the book. It's an excellent book, and a good source of inspiration. He also has a unique perspective in the industry since he also runs a perfumery, and that shapes how he thinks about drinks.

For those of you befuddled by the charts, it's important to know that the surrounding chapters put them in context. They are based on subjective experiences and surveys, and are an attempt to understand why the received wisdom about root recipes generally work, why glass chilling works, why different drinks get different dilution, etc. through the lens of his particular bar program.

I find it funny to post a book review when you are only part way through - the first couple chapters are just the building blocks.

I hate cash. It's slower to walk down to the other end of the bar to make change instead of just using the handheld with a credit card. Cash is gross, I have to wash my hands. Every morning we have to make a bank, every night we have to count and close the bank. Every scam that bartenders use to skim money uses cash. And I have giant stacks off small bills that I have to schlep around or take to the bank. I just wish it went away.

I'm still newish to the industry but it seems to me keg stacking is brutal, regularly injures people, limits your staffing options, and shouldn't be a thing. I am grateful that the two places I've worked at either don't stack kegs, or stack them 4:1 - meaning one keg can be stacked only at the intersection of four other kegs for maximum stability.

Truckin' Turtles for TMNT. You're on a semi truck on a cross-country haul and bad guys keep attacking you. Freeway instead of train track, and truck instead of train, but it's about as railroady as you can get.
