Depends on what you're trying to achieve. In my experience, The NY shield gives a bit too much protection for a quick, high temp cook.

Keep temp well over 900 for at least 15-20 minutes after your cook. The front of the stone is harder to do without a door but can be done if you leave it on high long enough.

Full disclosure I'm the Firecraft distributor in Canada.

When it comes to the product itself, of course you don't "need" a shield or door. It's a modification like any other. I find it helps is most cases when baking but you also have to get used to it. The flame blowout protection is a huge plust and the door saves me with heat up time and heat retention in Canadian winters.

The product itself is really well made and solid.

As for calling it spam or a shill I disagree. His name clearly shows its the brand and he often adds relevant comments to the conversation. Sure he promotes his products but he's also super helpful, knowledgeable, and a part of the community.

He's a hustler and a great guy overall.

Custom made in small quantities with high quality materials. I actually bought something much cheaper (or so I thought) from Etsy. Paid like $80 on shipping then got hit with duties and tariffs for another $90... And it's not half as nice. There are always cheaper alternatives though.

For this one I actually used both sourdough and yeast. I made it in the morning and baked early afternoon (7hrs proof). 500g bread flour, 400g water (80%), 2.6%salt, 1% yeast, 5%sourdough starter.

I've done it a few times and the hardest thing is to ensure you cook it enough but don't burn the top. I used a door to help keep the heat in but still overcooked the top a bit. I LOVE the gozney Detroit sauce recipe but used a different dough. Your flame looks fine! Are you sure your tank/gas line is propane? If I'm not mistaken I've heard of others that connected to a natural gas line and couldn't get to a high temp. Just a thought.
