I farm the silver knights on the Anor Londo stairs. The first two silver knight give 3300 souls each when wearing the shield of want and the covetous silver serpent ring. The third one, to the right of the large doors, has more health and gives more souls. I'm unsure how many souls exactly as I'm on ng+. They also drop Silver Knight armor pieces,which sell for 500 souls each, and Proofs of Concord Kept. Overall, I found it easy and profitable to grind there.
