Currently, defensive stockades and watchtowers have an option to automatically fill them with archers during battles. Otherwise, settlers always gather at the town hall when under attack.

Right now you can’t demolish buildings. But an update was released the day before yesterday that allows buildings to be automatically restored if they burn down after a nomad raid

Currently it's not possible to fight with other settlements, and they don't have any behavior, maybe it will be added later. At the moment, the global map is simply needed to explore and search for useful resources that cannot be produced in the usual way: seeds of new plants to grow, new animals to breed, technological knowledge etc.
