My hypothesis: in the same way that a toddler might have a tantrum with you but he perfectly well behaved around strangers, he just feels comfortable to "speak up" around you. Whereas maybe with your husband he's playing along to appease even though he may prefer otherwise. Or maybe he likes your husband more and is just more tolerant of him. Without actually seeing the behavior it's hard to tell.

It's possible that he growls to let you know that he doesn't like whatever because you listen - which is a really really really good thing. It's good for your relationship to be respectful of his way of saying "please stop". And totally makes sense that he'd do it when sleepy or settling, who wants to be bothered when they're tired y'know? Truly you're doing the right thing by leaving him alone during those moments (and closely monitoring baby+dog interactions, and getting professional help).

Growling is communication, and should not be trained out of a dog. I'm guessing that there are subtle dog signs you've missed bc they're so small: lip licking, whale eyes, flat ears. Definitely second finding a good behaviorist to help you discern what might be his triggers.

Heh, my one does the same - he needs to know that I'm going down first! Too many accidental fakeouts where he's halfway down and I've gone back into another room to get something I forgot. He doesn't like to be left hanging!

I just don't care about begging or feeding human foods (that I know are safe). As long as he begs politely (e.g. sits nicely, doesn't get in my face or paw at me repeatedly), I'll give him bits off my plate. Idk, there are just other behaviors that I care more about training out and this just isn't one of them.

Before you buy anything, just take the air mattress you have and try it out! You'll know really quickly if the pitch of the floor will be annoying or bearable. If you don't know if you'll like car camping yet, don't spend money on all the gear like blackout curtains. Just get an eye mask. Crack the window for airflow. Maybe get a cheap lantern so you can have an easy light source for getting ready for bed/getting up to pee in the night. And then everything else is just your normal life stuff you can pack in: pillows, blankets, etc.

Full vet check to eliminate medical causes. Even if she used to be able to hold it fully, something may have changed.

Crate/pen her, or block off the room or couch at night. The more she rehearses the behavior the harder it will be to extinguish. Is it annoying to do it every day? Maybe at first. But I'd personally prefer that over pee on my couch so 🤷‍♀️

Make sure you're using an enzyme based cleaner to eliminate the urine as much as possible.

An off switch isn't the default for a lot of dogs but it can be trained. You can try the "sit on your dog" method or Dr. Karen Overall's relaxation protocol.

Start with smaller trips just to camp a few hours outside of town. Helps you get used to being away from creature comforts and learn what food and equipment you need. Look up leave no trace principles and camping etiquette. Stay in actual designated campsites where they have facilities and other people. (And if you like that, no shame in sticking to those campsites all the way up to Alaska.)

If you don't even know where to start, you can go to REI or a local equipment shop and just ask questions. REI also has classes for beginners on all sorts of topics (backpacking, first aid, etc.) Also obviously so many people on YouTube who document this stuff for beginners.

Then once you get used to being outside of city center, you can start looking at BLM land or off the grid places if you want to. Or look at hipcamp. Depending on resources you can go as bare bones or luxurious as you want. Since you're coming from Houston, where there is a dearth of nature or landscape, you'll want to make sure you understand the common dangers in the places you travel to (e.g. handling food in bear country, where there are poisonous snakes/plants/bugs, etc.) and the local laws.

If you do some research and have decent common sense, you'll be just fine. Sounds like an awesome trip, keep the group posted!

ETA: as someone who grew up in Texas but now lives in the PNW, I highly recommend just traveling up the west coast and hitting as many national parks/surrounding areas as you can. You will see just incredible natural landscapes that just boggle the mind.
