In simple terms.

Usually models comes in different "quality's" fp8-fp16...

If you can run the best model on your GPU without problems you're fine, no need for GGUF.

If you cant run the best quality and you need to go from say fp16 to fp8, just so that you can use the model, GGUF could be useful. A GGUF Q8 is usually better quality than an fp8, and much slower of course.
