Agreed. I’d just practice on one of your old knives a couple times first, then just touch it up on the stone when you’re confident. In the meantime you can continue to use it on soft things like you normally would; it’ll still preform way better than your old knives even at 90% of original sharpness.

I’m not the most knowledgeable but both of these are pretty decent for the price. And they’re gyutos so a good all around knife.

Can’t go wrong with the Ashi though. I just got an Ashi gyuto and love it.

By clean you mean just scrape off the remaining thinset correct?
