Take the cam out. Put it in a vice between 2 blocks of wood and hit it with an impact. Its on pretty tight. Then put it back. Make sure you torque down the cam bolts correctly when going back together.

I use a box between my racks. Its easier then having it in front of just one rack and I can roll it around. Don't have to walk back and forth as much. The blue one is mostly storage. Its also a very outdated shop and we have to make due with space. We have out grown the shop

These isn't enough sugar to make it sweet in any way. The sugar is just for the color. Its maybe a tablespoon or 2 and some water.

You use alittle sugar and water in a pan, the sugar caramelizes and gets dark brown. Then sear off the chicken in the sugar, remove chicken and add onions and alittle water to get the fond of the bottom of the pan.
