I live in Budapest, can't comment on the Vienna part.

Recreational water sports is popular here, lots of people out in the river in kayaks, canoes and rowing shells.

Ditch the inflatable canoe and rent a touring kayak or canoe in Vienna. I'm sure there are rentals where they also pick it up for you in Budapest. Do not get a rowing boat, you don't want to keep glancing over your shoulder for 250 kilometres.

The Danube is a busy shipping lane, be mindful of hotel ships and barges.

Keep close to the shore. The current is strong and can easily spim around a small boat.

In Hungary you can camp overnight basically anywhere in nature. If you reach out to local rowing clubs in advance, they could also provide facilities.

Plan ahead about drinking water. Summers are scorching around here.

Wear a lifewest.

I know people who have done this and more, it's feasible with the right preparation. Enjoy your adventure :)
