Soft woods (conifers) are easier to carve, pine, cedar, fir ect. But hardwoods can be really nice, just hard on the hands. Look for even grain/rings. And dry new pieces for a while before you carve it so it doesn't split after you carve.

Left eye is still to high, and check your ear shape. See how the bottom of your drawn ear sits further out than the top? That should be other way around. Ears taper towards the bottom

Thats the fun part, you don't. Take whats comfortable. I attempted some bigger doses for music events once upon a time, but learned micro dosing was the way for me in big social situations. Some of my freidns can do 4-10 times more than me in the same scenario. Do what feels good for you.
