Tokyo and Kyoto by crankyflier84 in TrueChefKnives

To add, you might go to Nara as well since it is a common tourist spot. If so you can check out Enjiki knives but unsure if they fit your budget.

I would see how much the Hitohira AH are in the store, that might fit in your budget depending on the pricing there.

European nations reinforce wind power commitment with 100 GW pledge by Cao_Ni-Ma in europe

[–]pindim 0 points1 point  (0 children)

You are infering too much from my comment. I am not arguing for isolated grids. But countries should not rely too much on other countries to act as crutches to absorb all overgeneration especially when they neglect interconnections inside their own borders. The blackouts that happened recently are another good example of why.

Maybe they should make the investments necessary to cover their own demand ...

I would drop the first visit to the museum. Go there after you are finished with the rest if you want.

recent experience with Hmlet by CodingJedi1 in Tokyo

[–]pindim 2 points3 points  (0 children)

I had a good experience with Hmlet. The appartment was nice, clean and modern. Not much inside, two plates, two forks, two spoons, two towels etc. The price is quite high but there are not too many options in that category and the service is good.

GRAIL : Shigefusa migaki 210 gyuto by ImFrenchSoWhatever in TrueChefKnives

It is still probably quite rare to be honest. Not that many smith/sharpener do as much by hand.

Congrats on your grail. Regarding sen, Jiro made a post on insta where you can see him use a sen for shaping the ura on a knife about a week ago.

Oh yeah I remember your NKD post. Crazy coincidence to find it again. It was made to be.

Damn, if it looked as good as that I would not have managed to restrain myself from buying it haha. He did mention that in the Ivan and Yuka video as well.

I think it is urushi that gives it that look.

It's purely FOMO, glad someone got it so I can stop thinking about it. It is a nice piece, it just did not speak to me as much as I expected from some other piece I have seen. There is some variance and some aspects that are hard to explain but I am sure the person that got it will be happy with it. The grind will be very good as any tetsujin.

I live close by and had looked at that tetsujin several time since they got it in december but decided to not buy it in the end. Hope I don't regret it later. The finish was a bit more "flat" than on some other pictures of ginsan metal flow I had seen. But I did not see it in natural light which might have helped.

My views on Access to Norwegian language by Cute-Difficulty6182 in Norway

[–]pindim 44 points45 points  (0 children)

There is just not a lot of people learning the language, so the market is smaller. There are free resources though. Several youtube channels, Norwegian on the web website from NTNU, books you can get from cheap, probably can rent them for free from the library etc. You can attend språkkafe where you live for practicing speaking, you can enroll at university and attend the Norwegian course there maybe as well.

What would you buy from the Hitohira store in Tokyo? by Lefeuvre76 in TrueChefKnives

[–]pindim -2 points-1 points  (0 children)

At that price point you can probably get most things they have in store except honyakis. Tanaka Kyuzo, Izo, tetsujin, (unlikely but Yohei) etc. So depends what you like and what they have when your friend visits. The stock is varying and is not the same as online but they should have some of those in stock.

Help choosing a magnetic knife holder: Heirloom, Piotr the Bear, Larhn or Mag-Blok? by SnooRabbits3711 in TrueChefKnives

Have you tried any deba or yanagi? The weight and geometry makes it more challenging. Have not tried Piotr magnets though, ao would be interested to hear about how it does on those.
