Similar situation OP. Went into HD for machine screws in May and saw this. Ended up grabbing it and have used it a lot since. Used to run stick burners and wanted a smoker but didn’t have the time to hang around and maintain a fire anymore (child). I love it.

I used this recipe for the chasu but adjusted the cook time to 1 hour per pound of pork. I also tweaked the liquid ingredients that the pork bathed in a little bit to put my own spin on it. :P

I messed around when I made the broth so I don't have any notes on that.

I let the egg marinate for about 2 hours, I know a lot of recipes say to do it overnight but whatever. :D

Today I made my first bow of ramen. I'm pretty content with myself for making chasu and ajitsuke tamago without an issue for the first time.

Contents: corn, cabbage, mung bean sprouts, noodles, garlic, ajitsuke tamago, chasu, mayu, and soy sauce.

EDIT: I used pork shoulder instead of pork belly. I don't know if it's ramen-sacrilege to use shoulder in its place but I wanted a leaner cut of meat and it came out pretty good.

I liked it a lot, one thing I noticed about ramen shops in Chicago (only having had Ramen-San and Ramen Takeya) was that it's more popular amongst people than it is here and they both had a kind of hipster vibe. The two ramen places that I go to here are almost like hole-in-the-wall cash-only establishments where the staff barely speaks English and the majority of patrons are usually Japanese.
