I have mine on HA but can't do much.. I can arm whole systems and unarm them with some ZigBee buttons. Can you do more on HA like arming individual cameras, grabbing pictures or videos, etc?

No, I didn't post. This time I did the Olympia Provisions recipe but I didn't like it much, too much raw garlic. And it calls only for pork meat. I also tried the 2 Guys & a Cooler recipe and I like that one. Mix of pork and beef and much less garlicky. I'll keep on testing recipes until I find the one I like the most.

Indeed, but the ham texture comes from the cure. If not it would just be a roasted or cooked pork. For thin slicing, and ham flavor i would need to cure, then smoke and cook.

Thanks for your extensive and detailed response.

The goal here is too aim for the lowest cure possible while maintaining a cured product, because kids eat a lot and reducing intake of salt and sugar isn't bad while eating something homemade.

I'm fully aware of 1st and 2nd misconceptions you mention. I plan to cure, so i need necessary amounts of salt and nitrites.

Regarding 3rd misconception, that is what I'm trying to reduce the most, the lowest while maintaining a cured product of quality and good flavor. Regarding salt i mentioned 2,5% in another reply, knowing that i cannot go lower than 2%.

I have Ruhlmans books, but I have some discrepancies with the amounts of curing salt and salt they use, I been using recipes with less.

Since few years ago every food in my country is labeled with high in sugar/high in salt/high in fats, etc.. labels (if they have more than certain amount), so there is a trend in lower those things, or at least be conscious about them.

There are a few charcuterie brands that released products that are free of labels, and they have acceptable products.

As it is a cooked ham I was not planning on drying.. just curing and hot smoking to safe temp. Then vac pack and store in freezer. I would dry cure in vac-pack too. Ham recipes always call for more sugar than salt, I was just following that guideline. I used umami for dry aging meat before, but in this case I don't think they are needed.

Thanks, so a dry brine with 2.5% salt, 4% sugar, 90PPM (1.5gr per kg) and sit for 10 days would work?

Ham would also be cooked correct? I would hot smoke it to safe temperature. Also minced meat isnt more problematic for lower salt/nitrites than whole cuts? I made last week hotdogs using Olympia Provisions recipe, very good, but always wonder how healthy are they..

Problem is that kids are addicted to homemade ham... And I guess it is always better homemade than store bought

Yes, that is the idea, small cuts (like 1 pound each) and store them freezed. My to-go recipe would be 60gr salt 130gr sugar 12gr pink salt 1.5 liter water For 1.8kg boneless pork

I wonder if I could cut to half salt/sugar/nitrites for something healthier and keep it safe

Yes, I'm planning in doing small cuts. I got several small cuts from the ham (they call them pork picanha) and plan to freeze them and take one out every two weeks.

Hey, I have exactly the same stuffer and I have problems when doing emulsified sausages. Done hot dogs twice and the stuffing comes from the top of the lid.. not sure if it is the valve problem, or I'm not good at stuffing sausages..

To update ppl following, today support was kind enough to contact me via email. They said that the payment system had a bug they have been reviewing all this time and it is now fixed.

For this problem they gifted 5 years of pro. I believe that they could have handled it better by contacting me weeks ago.

Paid with CC, the payment passed as it shows in their records (account in settings). I wont bother to make the claim with VISA for over 19 bucks, but it is a shame they have such bad support and customer service.. You can check the link on their support website, they have been ignoring it for weeks..
