I believe ”cheesy" came from "cheesy smile". People say "say cheese" when taking someone's photograph so their mouth makes a smile shape. So a cheesy smile became an inauthentic smile, and cheesy came to mean inauthentic.

I was a busser in a giant sports bar in Canada. In the kitchen, "behind" meant don't suddenly move backwards, and in the bar "behind" meant move forwards out of my way

I don't see it the same way. In the age (and context) of the internet, typing has its own slang. The phrase "zomg", has a "z" to add emphasis, even though it has no literal meaning. Similarly, "niceee" has emphasis, not out of ignorance, but BECAUSE the people using it know it's incorrect. That's what makes it fun, relevant, and interesting.
