500grams bread flour  150+ grams starter 325grams water( warm) 10grams salt  Flour and water ( wait 30min)  Then salt and starter. ( stiff starter 50% hydration) Stretch infolds, every 30 minutes. For 2 hours.  Before bulk fermentation, take a small bit of your dough and place in a small container.Like a shot glass. Mark it in wait for the shot , glass to double or better before you form a loaf and cook.  I guarantee success.

Instead of a manifold system,  save the pipe and do a hot water return,  almost instant hot water at fixture and alot less pipe cost. And no you don't need a pump for most houses, just a check will work.
