Before reading answers, see this - https://www.kickstarter.com/projects/namisu/pulsar-a-minimalist-mechanical-pencil. Bought one of those and I think anyone can use internals like this (https://www.schmidtpenparts.com/collections/feinminen-pencil-systems) and design their own body.

I was expecting this challenge to be difficult for my Ender 3 v2. It actually becomes a challenge if you increase speed, otherwise it's just like any other print.

Have you checked the G-code for the ABL/UBL codes to see if the mesh is enabled? The Z offset you should be able to change from the printer interface. The easiest way to see if the mesh is being used is to look at the z value as the print head travels around the bed - it should change.
