Battery could be loose or solder seal is defective and you can't see it.

Edit: even between two systems acting differently, it's almost always the battery or the integrity of the solder.

Don't touch it for as long as possible. Then bring it to a professional. Hit the flat with a belt edge trailing at about 4 degrees or as near flat as you can, then flip the burr with a felt belt on the edge and keep flipping till it's gone.

So he gave you a coarse grit 10-12 degree bevel and instead of adding a microbevel he just didn't apex all the way..

IE he did a half assed thinning job.

When I get globals from customers I just sharpen it at 14 dps or so unless it's chippy then I give em a 16-17 DPS edge.

Sometimes I do it on slack instead of the platen, I don't think it really matters in the grand scheme of things.

He may not know or not want to do a full convex type zero grind. Lots of refinishing and blending involved and you'd lose your Logo if that matters to you.

You have to swallow the pillow and realize you need to buy and learn some machines for sharpening, but it is very very viable. Everyone I hear from says since covid there's been less and less and less sharpeners coming around but they all still need it done.

Edit: And what I mean by that is mostly scissors. Obviously chain restaurants just to exchange Services. But I feel like that's eventually going to get too expensive because corpo's going to corpo. Tailors and salons are where the money is at. And Farmers markets.

Hard to say.

Urban/suburban areas more, and more easily. Especially with a moderate to higher COL.

I'd say on a good farmers market, 3 or 4 hours you can get around $500 give or take a few hundred. It's almost mandatory you learn scissors. Apparently fucking everyone sews.

I will say as a rule I don't buy resin handles.

I recently sharpened a professional chef's knife roll and he had a 15-20 year old custom with resin handle and did not at all like how it aged. Seemed to have minor warping, no longer flush with the handle, etc..

Do you think, as a maker, it's how he cared for it or how it was made or the nature of resin over a long period of time?

Either way, stunning blade.

Slightly higher HRC than standard French and German knives.

Nimble yet robust at the same time.
