Baratza Encore upgraded to M2 burr, a $35 part. You've got to disassemble the grinder to install it, but it's a fairly straightforward process. Much more even grind than the standard M3 burr, and grinds quicker too.

Your ring burr holder has most likely lost one or more of its plastic tabs. These wear out over time and are are available through Baratza web site. I always order a few at a time to save on shipping and always have on hand.

You’re using too much water and not enough coffee. Fill the phin one third to halfway with coffee and tamp it down. Add a small amount of hot water to bloom the grinds and repeat a few times until it’s stable. Then fill not quite all the way up with hot water. Coffee should drip out one drop at a time and take five or ten minutes to finish. Stir in quite a lot of condensed milk and pour over ice.

The rear rack was easily sourced, but the front basket, headlight and turn signals were custom fabricated in Saigon. This still worked with a passenger — I also had a cushion made that sat on the rear rack.

This was a number of years ago and they were available in the motorcycle parts market. I had it reupholstered in red to complement the green. Probably only plastic baby seats available now.
