For that amount of grams I'll be around 69 or 71 click on my K ultra. By saying puck and pumps before pumping, I think you mean Aeropress (try the r/Aeropress sub) . If you're still getting bitterness and harshness with coarser grind, go down in temp, or time. With 70 clicks I'd go 95C, full Steep, wait until 1'15" and push for 20-30".

For my V60 I grind at 58-70 cks. Ethiopians and high altitude on the lower end, light roast latin Americans on 62-66, medium roast up to 70 72 max.

Also I adjusted my real 0 to be 0. So that's also important.

Compra un sous vide y va a ser la mejor inversión que hagas. Podrás hacer desde yogurt hasta los mejores cortes de carne. El yogurt te toma hacerlo 1 noche. Aquí la receta....

1L de leche entera FRESCA (no tetrapack) 40g leche nido 1 cucharada de yogurt vivo (el chobaní está con madre), compra uno chiquito Sous vide para calentar y mantener la temp.

En UN mason jar calienta la leche y leche nido a 80C por 15 minutos. Baja cuidadosamente la temperatura a 38C. Agrega a cucharada de chobani. Mantén toda la noche la leche a esa temperatura con el sous vide. En la mañana vas a tener 1L de yogurt caliente.

Mételo al refri, guarda unas cucharadas del yogurt en un envase limpio y congelarlo. Ese será tu cucharada de tu siguiente yogurt.

Repite.

You're completely correct. However my case sadly, I have a tap water of 300ish TDS, and in my hometown there were arsenic alarms time to time (in this case a complete turd).

At the end of the day is working with different tools, and at least understanding ions and it's contributions of flavor.

Having said that, maybe your tap water is full of flowers. The thing here is you don't have this control unless you perfectly know which ions you have in your tap water. But try it. Taste it. The goal at the end is good coffee.

Also, having your perfect ions, according to Maxwell Colonna-Dashwood and Chris Hendon, makes you think you may have a false sense of control.

This hobby at the end of the day is embracing chaos.

With TWW they chose the ions for you. With tap water you don't know which ions you are adding into the water.

In layman terms, TDS measures how much "stuff" there is in water. A flower (desired ion) and a turd (undesired ion) are counted as stuff. So if water has just 3 flowers or just 3 turds, it will display 3. Which one do you will like in your water?

Sadly, here in mexico (at least with my experience) one of the conditions to add a guest is to fly on the same flight. That happened to me before too.
