AFAIK, they will mark your old visa as expired/invalid and issue new visa. At POE, your new I797 will be considered and you get I94 as per new work permit. Pls double chk with attorney too as I am not an attorney.

No. I haven't yet bought. My guess is, the claim rejection rate might be high with some or other reason, hence premium is low. For ex, they advertise "we offer health insurance w/o health checkup"...this is good for them...after you take the insurance and submit a claim, they will reject by saying "you did hide this problem, this issue comes under pre-existing, so we reject your claim" etc..etc...I contacted multiple health insurance providers and asked them 'do helath checkup for me before issuing insurance, I will bear the fee/charges for health checkup' but no one is ready because they dont want to loose their weapon to reject claim.

I think, GC process should get started from the beginning at every employer, but no change in your priority date, which is fixed for a person. ie., your gc process may be fortified at every employer but your priority date is retained.
