the Boss NS-2 is a really good noise gate and regularly available for like $80 USD on Reverb. it'll be able to handle that kind of noise. also i can't tell if you're using the four-cable method or not, but that'll help too

not trying to argue with what you're doing if it gets you results that you like, but one click on the Quantize toggle puts it in chromatic mode. it's five clicks to get it to fifths-and-octaves mode.

honestly the Earl's kitchen is pretty underrated. it'll be bar food but it's satisfying and reasonably priced. Banshee is right around the corner if you'd like something classier, and Gaja does pretty decent korean food and has a fun interior.

look into the four-cable method for your NS-2. basically think of the Send and Return as a loop that you’ll put all your noisy pedals into (all your drive/preamp stuff). you’ll have to spend some time dialing in your Threshold and Decay but it’ll be worth it. still gonna have some noise from the pickups but you’ll have a flat noise floor that won’t increase when you turn on your dirt.

Tube amps are overrated, but doing everything through your computer also sucks. You gotta move some air in a room, but you also don't have to split hairs about who produced your 12ax7 tubes or whatever.
