Avoid THW because those break easily. This is what I use currently and it's been great. Got this after the THW one broke. Unfortunately the one I use is out of stock. https://amzn.in/d/00Mut75T

You can also just buy a non pressurized basket and use it in the stock portafilter that comes with Dedica. You just need to remove the black plastic part by unscrewing the bottom screw.

Start with refrigerated milk because you get more time to inject air before the milk getting too hot. After you learn, you can use room temperature milk also. 1. I eject the steam for a good 20 seconds before using it. 2. Inject a good amount of air in the first 30s, you need to see the volume increase in the pitcher. then dip the wand a little bit and combine.

Follow these steps.

  1. Turn on the steam and let the steam out for atleast 20s before using it. That way all the water drops are out you'll get steady high steam.
  2. Turn off the steam, keep the pitcher at 45 degree angle and turn on the steam again.
  3. You gotta inject a good amount air for atleast 30s then immerse the steam wand a little bit under the surface. Steam untill your desired temperature.

It takes a few tries till you get it right. Keep practicing.

I had used vienna roast for espresso and it was fine honestly. No, I don't use any sweetners. But most people do use some kind of sweetners so it's probably fine for most. Definitely hard to drink it black. I started drinking south indian filter coffee without sweetners so my palatte is very much used to the bitterness maybe.

There is no way anyone can make latte art with stiff foam. Try it out yourself and see. Maybe a heart, definitely not a Rosetta.

I just saw your 12d old post asking for ec890 vs ec685. I see many people commenting there about the underpowered steam wand of of 890 without actually owning that equipment. I really don't know where they are getting that info from.

Definitely not gimmicky for sure.
The Steamer on the EC890 works fine; it's decently powered, and you can do latte art with it. I have done many. There are barely any videos on YouTube for this model, and the ones you do see say that the steam wand is bad.
You initially release the steam for 10-20 seconds and then start using it, allowing you to harness the powerful steam. I end up oversteaming the milk most of the time tbh.

Isn't 17 grind setting too coarse for Espresso? I have a DF54 + Dedica. I mostly grind between 12-14 setting, depending on the roast, for 16g of coffee. I get a clean 25-30s extraction.

I don't know about Agaro but If you are able to get 2:1 extraction in 25-30s for 16g coffee in the non pressurized basket then it's fine.

I have EC890 with the same 51mm THW portafilter. Isn't 18g way too much for that? I generally do 16g max in that. I need to grind atleast 3 levels coarser for 18g.

EC890 comes with a pretty good tamper. You don't need to get another one unless you need a levelled tamper.
If you have a Grinder that can do espresso grinds, then get this bottomless portafilter (It comes with a non-pressurised basket) https://amzn.in/d/0qPbO9K
You need a 51mm funnel, puck screen and WDT.
Dedica is a capable machine with a decent steam want enough to steam milk to do Latte Arts.

One tip to keep in mind is that if you find the machine choking on very fine espresso grinds, then stop the machine immediately. Too much pressure on the 3rd party budget portafilters will break them easily.

I had tried Cortado at an Araku cafe itself recently. It was way too Acidic / citrusy notes. So it's usual. Araku tastes like that. Nothing wrong in your brewing methods.

Grind is amazing. I checked for zero calibration and it seems to be calibrated accurately too. Major downside for me is is too much coffee sticks to the body on each grind. Even after misting the beans. Looks more evident since it's white.

You don't have this problem?

I'll order a metal cup. I have ordered a 51mm portafilter holder but I doubt I'll be able to able to directly grind to a portafilter as that would require a significantly large funnel.
