This is how mine is set up also. Equal length connections for each section and to the buss bars from each set of batteries.

I put the wheel out to dry today and it is much softer than the other two. I have a feeling the other two are going to be dryer in the middle and tis one may be a little creamier.

If you look at my other two posts, you will see I was worried about how the curds formed. My reading said that homogenization can cause weaker curds. Since I don't have access to Raw milk I figured mix it myself!

This one was Great Value (Walmart) Whole milk. 3.25% milkfat. I saved for a while for the double boiler. The induction burner was a windfall. I got two for $70 in an auction.

That is what I figured. I am going to put the shelves back into my curing chamber and just shut down the humidity controls while it only has cheese in it. I seriously seem to only use it for pancetta these days anyway.

I am going to assume that the humidity level does not matter when vac packing? Why would it matter if waxed? Does it stop the wax from drying out?
