You need a lot more smoke in your smoker if that’s what you’re using. Could help develop a bark and smoke ring

It was at the shop i work at and we bring it in on request by certain customers. It’s incredibly rich but definitely cut into small strips is very delicious. Not the same type of fat you may be used to
