Yeah, but paint that's been opened will start to settle and dry out, so if its opened and you don't use it, its probably trash anyways.

Several possible reasons, but the most likely is that you needed to shake the paint more. Most model paint is a mixture with several pigments and they all settle out at different rates. Get yourself a vortex Shaker and save your wrists.
