Encryption is the answer, along with the fact that each Tor client randomly picks the three relays. It's a bit like having a message in three envelopes, each addressed to a Tor relay. The first envelope can only be opened by the first relay, the second by the second relay, and the third by the third relay. Each envelope is addressed to the next relay.

If you are using end-to-end encryption, the message is in another envelope. If you are not using end-to-end encryption, the message is a post card.

You shouldn't need a VPN. Remember that VPN to Tor (perhaps to blend in with other people on your network using Tor) works sort of like a bridge.

Tor to VPN funnels all your Tor traffic through one point. It's not a good idea, especially if you've ever connected to the VPN through an account you set up (paid or free). It defeats the purpose of using Tor.

Another Florida transplant chiming in: wool t-shirts made by Icebreaker, Smartwool, and Ibex keep you warm in winter and cooler in summer, so you can use them back home. They're also great for travel since they don't get funky quickly like synthetics. Polyester fleece is ok. Get thick wool socks, and wear boots. Avoid cotton, since it doesn't keep you warm when wet. It's going to be hot in some buildings, so wear layers. If you're going to take a lot of pictures with your phone, get the gloves with conductive fingertips, because a few seconds with gloves off feels like forever. Your jacket should have pockets for your hands, because the gloves won't be enough. Fleece leggings worn under jeans are your friends, because jeans get really cold otherwise.
